This six day course includes five practical cookery workshops which will take you through some of the major traditions of medieval European cooking: from England, to France, Germany, Denmark, and Catalunya. In addition, we’ll have academic insight into the recipe collections and historical contexts from Professor Giles Gasper and his team from Durham University in three classroom sessions. The course will enhance your knowledge of medieval food culture; medieval sources; medieval and modern culinary practice; menu planning and commercial cooking together with some transferrable skills in time and people management. The week will build-up to a medieval banquet meal on the Friday.
